Khapse
This is one sweet snack enjoyed at tea time in households of Arunachal. It is light and delicious. The tribes use Amaranth Flour to make it but you can also use regular flour to make this dish. The other required ingredients are salt, ajwain, oil, half cup of milk and sugar.
At first, you need to mix warm water in flour. Pour the milk in it and add some oil too. Make thick dough from the mixture. Now cut some long strips from the dough. Make a hole in middle of each strip. Insert a corner of the strip through this hole to make twist shaped pieces. Deep fry the strips in oil till they turn golden brown. Serve them with masala tea.

Khura
This is one buckwheat pancake that tastes awesome. This is a Monpa food and it is popular in Tawang especially. It is often served with butter tea. The required ingredients are buckwheat flour, butter, salt and water.
Make a batter by mixing water with the flour in a bowl. Let it stand for some time. Now, heat a tawa on flame and sprinkle some butter on it. Then, slowly spread the batter on it. Then flip and fry the pancake.

This is kind of a porridge or thick broth made with vegetables and it is both healthy and delicious. This is what usually Monpa farmers eat before going to fields. You will need wheat flour, chopped vegetables, water, salt and butter. You may take diverse vegetables like cabbage, peas, chopped carrots or even broccoli.
At first, you need to roast the wheat flour in butter till it becomes light brown. Add some water to it and stir and simmer. After some time, add the blanched veggies and stir cook them in broth for a while. This can be served hot with fermented soybeans.
