Assamese chicken fry/ Kukurar Bhaji
This crispy chicken fry is ideal for serving as starters in meal. You will need 500 grams of dressed chicken pieces to make the dish. The remaining ingredients are Poppy seed paste, Onion paste, Mustard oil, Crushed Cardamom, turmeric powder, Chilli powder, Bay leaf, ghee and salt.
At first, you can steam cook the chicken pieces until they are semi soft. Strain the juice and strain it. Now fry the bay leaf and crushed cardamom in oil. Add the onion paste and then the turmeric powder, chili powder. Then add Poppy seed paste to it. Pour the chicken pieces. Stir fry and then cook with lid on low heat. Add the stored chicken juice. Before putting off flame add the ghee and stir a little. You may use coriander leaves for garnishing.
Fish Egg Fry / Masor Koni Bhaja
Assamese people love eating fish and they leave almost no part, including fish eggs! The Fish Egg Fry or Masor Koni Bhaja is delicious and easy to prepare. You will need about 200 grams of fish egg, chopped onion, chopped tomato, garlic and ginger paste. You will also require Green chilli, turmeric, salt and Mustard oil.
At first, you will have to wash the fish eggs well with water. Mix the eggs with all ingredients well except oil. It will be a sticky mixture. Now, deep fry balls made of the mixture in mustard oil well until they turn reddish brown. You may serve them hot with rice and daal.

Fish Eggs with Brinjal / Maas’or Koni aru Bengena
This is a twist on regular fish egg fry recipe and using brinjal adds to the taste. You will need 250 grams Fish eggs and intestines. Other ingredients are 3 small brinjals, chopped Onion, chopped Green Chilies, mustard oil, salt and turmeric.
At first, chop the brinjals into long and thin pieces. Then fry the green chilies, onions in oil for a while. Add the fish intestines, chopped brinjal, turmeric and salt. After a few minutes, add fish eggs. Break the egg lumps into small pieces with a ladle. Cook on low heat for 1 minutes. Serve it with rice and masoor daal.
Assamese pork fry
Pork is a much loved meat in Assam and this Pork fry recipe is absolutely delicious. You may use 500 grams of pork cubes with a liberal mix of fat and meat. Other ingredients are ginger garlic paste, pepper powder, chili powder, turmeric powder, mustard oil, salt, vinegar, chopped onions, chopped potatoes, some green chilies slit.
At first, marinate the pork meat in ginger garlic paste, salt, chilli powder, vinegar, pepper powder for a few hours. Then fry the fat pieces in a pan with oil. As fat breaks down, add the potatoes and onions. Then add the green chilies and turmeric powder. Next, add the remaining pork pieces and fry on low flame. Ensure the meat gets both tender and dry.
