Nuances of Starfruit/Carambola
Star fruit, also called Kordoi in Assam, is known for distinctive ridges on its sides. The fruit, when cut in cross section looks like a star, thus leading to the name. Ripe fruit is edible and skin is smooth and slightly waxy in texture. When the fruit is ripe it becomes yellowish and the flesh gets translucent. Its flesh is juicy and crunchy and ripe fruits taste sweet. There are 2 main variants- larger sweet type and small sour type. The fruit is replete with antioxidants, vitamin C and potassium. However, its oxalic acid content makes it somewhat unsuitable for people with kidney ailments.

You will need a couple of Starfruits to make this tasty chutney. You will also need paanch phoran, Salt, Sugar, oil and green chilies.
At first, sauté the paanch phoran in heated oil. Then, add the fruits after making small pieces. Add the green chilies and salt too. Stir fry and add sugar. Simmer and stir fry for a while. It will reach a jelly like consistency. Let it cool and store in refrigerator.
Maas aru Kordoi tengar jool
This recipe, made with fish and starfruits is absolutely yummy. You will need a few semi-ripe Star fruits. The other ingredients are turmeric powder, 4 fried fish pieces, mustard Oil , salt, sugar, mustard seed, flour and chilly. You may make use of any type of river fish to make this dish.

At first, cut the fruits into small pieces. Then, fry the mustard seeds in oil and add salt, chilly and turmeric powder. Add the cut fruit pieces and cook on low heat for a few minutes. When the fruit gets softer, add a small amount of water. Make a paste of water and flour and add it. Then, pour in those fried pieces of fish and cook for some minutes. Serve the dish hot with rice.
