It is wrong to assume that Assamese tribes use mostly animal meat and fish types for meals. They are voracious rice eaters and the truth is they also use numerous vegetables and fruits in their cuisine. They use bananas a lot in their dishes. In fact, Assamese cuisine involves using almost every part of banana plant. Numerous fish dishes are cooked through steaming while being wrapped in banana leaves. They also make use of raw banana and stem of banana tree to cook sumptuous dishes.

Posolar Khar Bhajie

This is Banana stem fry that is served with rice and daal dishes. To make the dish, you will need 500 grams of tender banana stem, mustard oil, salt, sugar, baking soda, mustard seeds and Fenugreek seeds. You will also need chopped onion, garlic cloves and cumin seeds.

Cut the tender core of banana stem into tiny small pieces at the beginning. The heat oil in a pan and fry chopped onion, garlic with seeds. When these are fried well, add banana stem and stir fry well. Add hot water in small amounts and add salt and sugar in desired amounts. Simmer until the mixture is thick.
Kackolor bor bhaji

This is basically raw banana cutlets that go well with daal and steamed rice. The required ingredients are a cup of boiled and mashed raw banana, a Boiled potato, chopped onion, Breadcrumbs, chopped chilies, chopped coriander leaves, salt, oil and Garam masala powder.

At first, mix the boiled potato and mashed banana well in a bowl. Add the coriander leaves, green chilies and chopped onion to it. Now, sprinkle garam masala powder and salt on it. Add a spoon of breadcrumbs and mix things well. Make balls using your palms. Now, take the balls and flatten them and roll them in a heap of breadcrumbs to coat well. Heat oil in pan and fry the pieces until both sides are brownish. Serve these hot with mint chutney.
Kol Posolar Khar

Khar dishes are popular in Assam and banana stem can also be used to make khar. Generally, khar dishes are made of pulpy vegetables and baking soda. You will need ingredients like a cup of tender banana Stem, crushed garlic cloves, sodium bicarbonate, green chilies, salt, and mustard oil.

At first, cut the inner stem into small pieces and crush them with your hands. Then heat oil and sauté fry the garlic till it gets brown. Now, pour in the crushed tender banana stems. Stir fry and add all other ingredients. Add a small amount of water and cook under a lid for 12 minutes or so. Serve it with rice.
