Mizoram is among the north eastern states loved by tourists for the amazing and diverse natural splendor. The hilly landlocked state has a population of mixed ethnicity that is welcoming and hospitable in nature. Even the cuisine of Mizoram is quite enchanting. It is hardly as fiery or tangy like that of neighboring states. They use both vegetables and animal meat to make tasty dishes. Local herbs are also used to make Mizo dishes. The major cooking methods used are steaming and boiling.

Mizo Vawksa

This is basically stir fried smoked pork with Baby Spinach and Oyster Mushrooms. You will need Smoked pork chunks, crushed garlic, ginger, Oyster mushrooms, chopped Green chilly, salt and pepper to cook this dish.

At first, you will have to shred the smoked pork chunks into smaller pieces. Heat up some oil in pan and sauté fry the crushed ginger and garlic for a while. Then add the cleaned oyster mushrooms and sprinkle salt. After a few minutes add the pork, chopped chilly and pour a small amount of water. Simmer after putting a lid on the pan. When the dish gets dry, add the baby spinach leaves and stir. Serve with seaming rice or sticky rice.

This is one of the most popular vegetable dishes in Mizoram households. This is a preparation of mixed steamed vegetables that can be served with rice. You will need ingredients like a cup of Broccoli florets, 2 cups of chopped Cabbage, 2 sliced carrots, chopped tomatoes, shredded ginger and salt.

At first, steam all the vegetables together. You may even microwave them. The heat water in pan and add chopped tomatoes and ginger. Simmer for some time. Then add steamed vegetables along with salt. Cook for a few minutes and serve the dish hot.

This is a tasty grilled shrimp dish popular in Mizoram. You will need half a pound of shrimp, salt, two dozen Peppercorns, Mustard Oil, Coriander Powder, Lime Juice and Pepper Powder.

At first, you will have to peel, clean and devein the shrimps. Marinate the cleaned shrimp in a mixture of turmeric powder and salt for some time. Boil water and put the coriander powder and peppercorns in it. Then add the shrimps and cook for a while. The drain the water and place shrimps in a bowl. Pour a small amount of oil on boiled shrimps. Heat a frying pan and pour some oil in it. Grill the shrimp on both sides. Before serving the shrimp, you can sprinkle lime juice on top.

Bai is a major dish in Mizoram and here are quite a few variations of it. This is a tasty Bai dish you can try. You will need Cauliflower stalks, florets, cubed potatoes, Green Beans, Red Chillies, salt and cooked rice. You will also need small amount of baking soda.

At first you need to boil salt and baking soda in water. Then add the rice and stir for some minutes. Next, pour all other ingredients. Cook till everything become soft and mashed. Adjust the salt as per need before serving.

This is tangy and spicy chilly chutney Mizo people prefer having with main dishes. Hmarcha Rawt is also quite easy to prepare and takes just a few minutes. You will require green and red chillies, salt, raw onions and a dash of grated ginger.

You will have to roast the chilies on a tawa slightly. Then grind the chilies to make a paste. Mix this with chopped raw onions and grated ginger. Mix it well and serve with meals.
