 Assam is a state which is known for its amazing cuisine, along with enticing wildlife and natural beauty. Assamese people often resort to methods like fermentation, steaming, dry frying to make sumptuous dishes. The pitika dishes, often served with rice, are quite popular in the state. These are mashed dishes in which plenty of vegetables, fish, and egg are used. You can prepare such pitika dishes in short time and they taste quite nice.

Below listed are some popular pitika dishes of Assam:

Bengena Pitika

This dish is made using brinjal. You will need to use a big brinjal to make this pitika. The other ingredients are chilies, shredded ginger, mustard oil, chopped onions, Coriander leaves.

At first, roast the brinjal over flame. Now, peel off outer skin and take the pulp. Mix it with the ingredients well including ginger. Use salt and oil in small amounts. Serve it with rice after preparing.

Kothal Guti Pitika

Jackfruit seed is used to make a lot of yummy dishes in Assam. You will need about a dozen Jackfruit Seeds to make this dish. The other ingredients are chopped onion, chilly, chopped ginger, salt and mustard oil. You may also use chopped coriander leaves.

Take out the white outer skin of the jackfruit seeds after washing and drying them well in sun. Boil the seeds in pressure cooker.  Now, mash the boiled and softer seeds with rest of the ingredients. This tastes best when served with daal and steamed rice.

You can use katla fish to make this yummy pitika dish. You will need 200 grams of katla fish to make it. The other required ingredients are green chilies, chopped ginger, Mustard Oil, chopped Coriander leaves, chopped onion, and salt.

You need to clean the fish pieces well. Then roast them after wrapping in banana leaves over low flame or you may use a tawa too. Later, remove the bones from boiled fish pieces. Then mash the fish with all other ingredients well. Serve it with steamed rice.

Pura Bilahi Pitika

This is mashed tomato dish that is very easy to prepare and tastes amazingly good. You will need a few ripe tomatoes and a few dry red chilies. The other ingredients are chopped onions, chopped ginger, green chilies, coriander leaves, salt and mustard oil.

At first, you need to fire-grill the red chilies and tomatoes. Then mash the tomatoes and chilies with all other ingredients in a bowl. It is ready to serve.

Bhapot dia Masur Dailor Pitika

You will have to use a cup of masoor daal to make this dish. The other ingredients are green chilies, chopped coriander leaves, chopped onions, salt, Mustard paste and Mustard oil.

At first, wash the masoor daal and keep soaked in water for a couple of hours. Now, drain the water and use a muslin cloth to contain the soaked lentils. Tie the cloth well and then steam it in boiling water or inside a pressure cooker. It may take more than 10 minutes in pressure cooker. After the lentil is soft, mash it with all the ingredients. Serve it with rice.

Ronga Lau pitika

You will need a ripe pumpkin to make this yummy dish. Take a cup of cube cut Pumpkin. The other ingredients are grated onion, chopped Green chilli, Garlic paste, Coriander powder, Panch phoron, Mustard Oil, Fresh coriander and oil.

At first, boil the pumpkin in water and then strain the water. Mash the pumpkin pieces well and set aside. Fry the paanch phoron in oil in a pan next. Add the onion and chilies and fry for a while on low heat. Then add coriander powder and garlic paste to the pan. Now, pour in the mashed pumpkin and mix well. Cook for a while and put off flame. Serve it hot with coriander leaves sprinkled on top.
