Bottle Gourd in Assamese Recipes

Assamese cuisine is loved for its diversity and uniqueness. Along with various types of meat, fish and herbs, the tribes also make use of various vegetables to make mouthwatering dishes. They use vegetables like Bottle gourd to make yummy dishes. This vegetable is used along with other vegetables as well as fish in Assamese cuisine.

Below listed are a few nice Bottle gourd recipes from kitchens of Assam:

Lau bilahi khorisa aru mas


This is a delicious dish in which main ingredients are fish, bamboo shoots and bottle gourd. It can be served with rice. The main ingredients are half of a bottle gourd (cut into pieces), 2 small Tomatoes, fermented Bamboo Shoots- a spoon, four pieces of fried fish, Coriander leaves, lemon juice, Mustard Seeds paste, cumin seeds, methi and mustard oil.

At first, you need to heat oil in the kadai. Add the methi, cumin and mustard seeds to the oil. After a while, add the bottle gourd pieces. Add chopped tomatoes next and stir fry. Later, add some water for everything to get tender. Next, pour in fried fish and mustard paste. Before putting off flame, add lemon juice and chopped coriander leaves atop.

Bottle Gourd Khar


In Assam, khar dishes are served as appetizers mostly. Either baking soda or dried burnt banana peel are used to make such dishes. You will need a cup of khar (dried peel of banana burnt and added to water), chunk pieces of bottle gourd, chopped onion, a few garlic pods, dried red chili, oil, mustard seeds, green chili and salt.

At first, heat oil in a pot. Add the dried red chilies, mustard seeds and fry. Then pour in garlic pods and chopped onion. After a while, add khar and this will make the mixture pulpy. Sprinkle green chili on top and put off flame.

Bottle Gourd Bhaji


This fried dish goes well with rice and daal. You will need a cup of diced bottle gourd, Ginger, Green chillies, Sugar, Peanut oil, Milk, Salt and Mustard seed.

At first, wash and drain the gourd pieces. Slit two chilies and grate the ginger. Fry the mustard seeds in oil. Add the gourd pieces and slit chilies. Stir fry and cook under cover. Add the milk and all remaining ingredients. This can be served with paratha.
