Assamese cuisine is unique and for someone visiting the hilly state- it is often full of surprises too! The tribes of Assam use nearly everything in disposal of Mother Nature for cooking and the result is often delicious. Apart from using items like bamboo shoots and spicy chilies, they also use various types of meat and fish for cooking. In fact, they use common vegetables like Brinjal to prepare sumptuous dishes.
Below listed are a few popular and tasty brinjal (Bengena) dishes of Assam:
Bengena Bor ( Brinjal Fritters)
This is one fried dish which goes well with rice and you can also gorge on it with tea, especially in winter evenings. You will need ingredients like a Brinjal, Turmeric Powder, Besan (gram flour), chili powder, mustard oil and salt.
At first, make thin and round slices of brinjal. Wash the pieces and then rub with salt and turmeric powder well. Then, prepare a thick batter with besan and water. Sprinkle a small amount of chilli powder. Heat the oil in a deep wok or kadai. Dip each brinjal slice in batter and deep fry in the oil. Fry until each piece becomes golden brown. The fritters should be enjoyed hot.

Maachor Telera Bhoja Bengena
This dish is made with brinjal and fish oil. Ideally, you should take fish oil equivalent to half the amount of brinjal. Other ingredients are 2 onions, salt, turmeric powder, mustard oil, Dry chilli.
At first, you will have to clean the fish oil well. Cut the fish oil in small pieces. Then, cut the brinjal into small pieces too. Wash and slice the onion in thin pieces. Heat up oil in a kadai and fry the chili and onion on low heat. Sprinkle a small amount of turmeric powder and add salt. Add the brinjals and cover with a lid. Stir the dish a little and put off flame when the brinjal pieces are soft. Serve the dish with rice. Mint leaves may be used for decoration.

Bengena & Shanmehali Xaakor Khar
This is one kind of mixed Herb khar made with brinjal. You will need ingredients like 100 gms Brinjal, 2 onions, 50 gms Spinach, green chilli, Fenugreek leaves, Coriander leaves, Mustard leaves, Curry leaves. The spices required are Ginger paste, Fenugreek seeds, Sodium bicarbonate, Sugar and salt. You will need mustard oil for cooking too.

At first, you have to cut the brinjal in small pieces. Then, clean and drain all xaaks together. Chop the leaves into small pieces. Heat up oil and sputter the fenugreek seeds in it. Next, add the chopped xaak and brinjal and stir-cook. Sprinkle and mix salt, sugar and sodium bicarbonate. Add the ginger paste next. When cooked, serve with mustard oil garnishing atop. It goes the best with rice.
