Assamese tribes make use of various natural ingredients in cuisine. These include some uncommon and rarely used plants and herbs. They also use indigenous vegetables like Colocasia (called Cosu) in their meals. With the stems and leaves of this tropical plant- they prepare several mouthwatering dishes. Colocasia is used with other vegetables and fish in Assamese cuisine.

Bhul kosu aru mas
This tasty dish is made with root colocasia, fish and sponge gourd. You will need 4 fish pieces, a sponge gourd and 1 colocasia root. Spices required include ginger garlic paste, pach phuron, cumin powder, coriander powder, turmeric powder, black peeper powder. Mustrad oil and salt are also needed.

At first, you have to peel the colocasia root and then cut in into small pieces. Wash the sponge gourd and cut into small pieces after peeling thin outer skin. Wash the fish and coat with turmeric and salt. In a pan, heat up oil and sauté fry paach phoron and add the ginger garlic paste. After some time, add the colocasia and stir fry. Add the other spices now and pour in cut sponge gourd pieces. Cook for some time and add pepper and salt. Add water and cook again. Then add the fish pieces and cook for a few minutes. Serve the dish hot with rice.
Kosu xaak boot aru Mosur Dailor logot
This is a yummy vegetable dish made with Colocasia leaves, Red lentils and Black chickpeas. The main ingredients are half cups of boiled Black chickpeas and Red Lentils. You may take a bunch of Colocasia leaves. Other ingredients are chopped onion, tomato, ginger garlic paste, green chili, mustard oil, turmeric powder, cumin powder, crushed black pepper.

At first, you have to wash the leaves and cut into tiny pieces. Boil the leaves and then strain water. Wash the lentils and keep aside. Heat oil in a big pan and fry the chopped onion, green chilies and ginger garlic paste. Then add the spices and pour in chopped tomatoes. Stir fry and add the colocasia leaves soon after. Next, add the black chickpeas and lentils and mix everything well. Cook under lid until everything gets pulpy. Serve it hot with rice.
Colocasia flower fry
Like the stem and leaves, Colocasia flower is also edible. This recipe made with Colocasia flower is quite yummy. You will need some colocasia flowers, fermented bamboo shoot, and a chopped tomato to make this dish. Other ingredients are ginger garlic paste, chopped onion, mustard oil. Spices include red chilli powder, turmeric powder, coriander powder and cumin seeds powder.

At first, remove the petals of the colocasia flowers. Wash the flowers and chop. Then boil the flowers in salt water and drain the water. Heat oil and sauté fry the chopped onions and ginger garlic paste. After some minutes, add the spices and stir fry on low flame. Next, add the boiled colocasia flowers and chopped tomatoes. Mix with the bamboo shoot and fry for a while. Serve the dish with steaming rice.
