Mouthwatering Vegetarian Dishes of Tripura

Tripura the beautiful hill state in North East India is loved by tourists for its exceptional scenic beauty, ruins of ancient dynasty, impressive architecture and a rich heritage. However, the cuisine of Tripura is no less interesting than its sights and palaces. As it is, the Tripura cuisine has been influenced both by Bengali and Northeastern culinary traditions. While Fish and rice abound in Tripura culinary tradition, there are some mouthwatering vegetable dishes too.

Below listed are some typical vegetarian dishes of Tripura:

Tomato Oambal

This is one variation of popular Tomato Chutneys. However, use of lemon juice lends it a unique flavor. You will need to take a couple of large tomatoes, dry red chilies, salt, jiggery, raisins, lemon juice and mustard seeds. At first, heat some oil in pan. Using mustard oil should be fine. When it is hot, sprinkle the mustard seeds. Then add red chilies and sauté a little. Then add diced tomatoes and cook till they are tender. Add the other ingredients and cook on low flame. This chutney goes well with any dish literally. It has a semi thick constancy.

Kosoi Bwtwi

Kosoi Bwtwi is a traditional and popular dish in households of Tripura. This is a vegetarian version where fermented fish is not used. You will need to use ingredients like French beans, chopped onions, Green chillies, a few tofu pieces, garlic cloves, salt and turmeric powder. Tripura residents also use khundrupui leaves but this is not available elsewhere easily.

At first cut and clean the beans. Then cut the other vegetables. Boil the slit chilies in water and turmeric. Add the vegetables till everything is tender.  At last add crushed garlic and put a lid on. Cook a little more and serve hot with rice.

Kothalor Chakoi

This is one simple but yummy curry made with jackfruit seeds and lentils. You will need ingredients like jackfruit seeds, mustard seeds, green chilies, yellow peas, shredded ginger, garlic, salt and baking soda.

First of all, peel the jackfruit seeds and cook them with yellow peas in pressure cooker or microwave. Also add the baking soda and salt in the water. Then heat up oil in a pan and add mustard seeds and green chilies. Add everything else except boiled ones and cook on low heat. Next, pour on boiled seeds and lentil and add some water. Cook for 10 minutes or so and serve with rice.

Panch Phoron Tarkari

This is one of the Tripura dishes influenced by Bengali cooking tradition. This vegetable tastes delicious and goes the best with puri or parathasYou will need vegetables like potatoes, pumpkins and brinjals. You will also need to use dry Red chillies, Bay leaves, Green chilies, Turmeric powder, Panch Phoron and some milk.

At first, you need to cut the vegetables in small cubes. Heat up oil in a kadai and then add the panch phoron, bay leaves and chillies. Sauté for a few minutes. Then pour in the cut vegetables and put on lid. After some time add the turmeric and water. Also, pour in the milk and mix everything well. Cook till the liquid is soaked well. Adjust the salt as per need.
