Along with animal meat like pork and chicken, people in North East India consume plenty of rice. Apart from using rice to produce beer they also have rice as a main dish in the meals. The rice dishes prepared in these hilly states are quite tasty and they are not hard to prepare either. Below listed are few such rice dishes that are popular in the Northeast India.
Sweet Pulao (Assam)
This is a popular dish made in many households in Assam. It is usually served with chicken curry. You will need ingredients like 2 cups of broken basmati rice, ghee, sugar, salt along with vegetables like peas, onions, carrot to make this dish. Other ingredients are bay leaves, raisins, cashews and cardamoms.
You should soak the rice for a couple of hours and the dry it post draining. Soak the cardamoms, raisins, peeled peas and cashews separately. Slice the onion and carrots. After heating ghee in a pan, fry the vegetables along with bay leaves. Then add the rice and cook on low flame. Add salt and sugar next. Add water to submerge the rice and other ingredients. Now use pressure cooker to cook this dish until the first hoot. Serve it warm with chicken curry.

You will have to soak the rice with cinnamon and bay leaves for half an hour or so. Then heat ghee in a pan and pour the spices. Then add soaked rice to it. Fry on slow heat until ghee gets separated from rice. Add water to boil the rice. Put off flame when rice is cooked. Serve it with chicken dishes.
Xewali phulor Tita Bhaat (Assam)
This is one slightly bitter Assamese rice dish that you will not resent gorging on! It is used to get rid of cold and flu mostly. The Coral jasmine flower (dried xewali phul) adds an enchanting aroma to the dish. You will need a cup cooked rice, dried Coral jasmine flower (soaked in water), green chillies, garlic cloves, panch phoron, salt and mustard oil.
Heat up the oil and pour in the chilies, garlic and paanch phoron for sauté frying. Then add the soaked and drained xewali phul. After two minutes, pour the rice and salt. Mix for a few minutes and serve warm.
Kharoni Bhaat (Assam)
This is also a traditional Assamese dish used to help people alleviate cold and cough. You will need ingredients like Kolakhar, cooked rice, mustard oil and chilies along with chopped ginger, garlic cloves, onion seeds and salt.

Sauté fry the ginger, garlic in heated oil and add the chilies, onion seeds later. Then add the cooked rice, salt and kolakhar. Mix well and stir fry for a few minutes. Serve the rice warm.
Mizo Bai ( Mizoram)
This is one yummy and healthy Mizo recipe that can be prepared easily and fits in well for a filing breakfast! You will need ingredients like a cup of rice, mixed vegetables including cauliflower, water, salt and green chili to make this dish.

At first, chop and slice the vegetables in all pieces and wash them. Soak the rice separately. Heat water in a wok and boil all the vegetables in it. Add the salt and cook till vegetables get soft. Then add the rice and boil until everything becomes soft.
